Borges,KA; Furian,TQ; Souza,SN; Salle,CTP; Moraes,HLS; Nascimento,VP.
ABSTRACT Salmonella spp. remain among the most important agents of foodborne diseases worldwide. The importance of Salmonella spp. in public health is linked to their wide range of antimicrobial resistance and to their pathogenicity and virulence in both human and animal hosts. The aim of this study was to determine the antimicrobial resistance patterns for Salmonella serotypes isolated from poultry sources in Brazil and to detect virulence-associated genes and verify their association with specific serotypes. A total of 163 strains of Salmonella enterica isolated from poultry sources in Southern Brazil were selected, and each belonged to one of 11 different serotypes. They were tested against ten antibiotics and examined for the presence of 26...

Sereno,MJ; Ziech,RE; Druziani,JT; Pereira,JG; Bersot,LS.
ABSTRACT The objectives of this study were to evaluate the antimicrobial resistance and the biofilm-producing ability of Salmonella sp. strains isolated from frozen poultry carcasses. Antimicrobial susceptibility was tested by the disk-diffusion method. Biofilm-producing ability was determined in 96-well polystyrene microplates stained with crystal violet at 1%. Out of the 22 strains tested, all were multiresistant, that is, resistant to more than three antimicrobial classes, and 72.7% were able to form biofilms. The highest resistance rates obtained were against sulfonamides, tetracycline, and quinolones. On the other hand, 100% of the strains were sensitive to chloramphenicol. According to the rate of biofilm formation, 3 (13.6%) and 13 (59.1%) strains...

Fellenberg,MA; Espinoza,A; Peña,I; Alarcón,J.
The nutritional and sensorial characteristics of chicken meat can be affected by oxidative rancidity, process of oxidation of lipids in the meat that constitutes one of the main forms of food deterioration. This problem may be prevented or reduced by adding antioxidants to the meat during the process of marination. In the present study, the addition of a polyphenol-rich quillay extract (QLPerm®) at 5 levels (0, 0.05, 0.10, 0.15, and 0.20%) to the marinade of chicken meat was evaluated. The marinated meat was stored under refrigeration (6 ºC) for 0, 2, 4, 6, and 8 days. Basal and induced lipid oxidation was evaluated by TBARS analysis. Microbiological quality was assessed by total coliforms and mesophillic aerobe counts. The application of this natural...

Barros,LSS; Amaral,LA; Rossi Jr,OD.

Assessing paternity in japanese quails (Coturnix japonica) using microsatellite markers - inferences for its mating system and reproductive success Rev. Bras. Ciênc. Avic.
Gomes,ML; Hatanaka,T; Campos,WN de; Wasko,AP.
Microsatellite markers were analyzed in Japanese quails, Coturnix japonica, using different methodologies (PAGE and automated genotyping), in order to evaluate their use in paternity testing. Ten animal triplets composed by a female and two males were used to mate and generate an offspring. Paternity was determined in five-day-old embryos, and the data generated by fluorescent labeled and tailored primers in PCR and further automated genotyping were robust. Three microsatellite markers were polymorphic (Na = 5-8, H E = 0.75) and no loci were found to deviate significantly from Hardy-Weinberg equilibrium or showed any evidence of linkage disequilibrium (p > 0.05). A slight heterozygote deficiency and some incompatibilities between the female known parent...

ABSTRACT Salmonellosis is a globally important zoonosis, and Salmonella Heidelberg is one of the most prevalent serovars in poultry production worldwide, as well as in food poisoning cases. Antimicrobial drugs were previously widely used to face health challenges in animal production; however, since their ban as performance enhancers, many alternative strategies have been proposed. One of these strategies is the use of plant extracts, such as those containing the alkaloids benzophenanthridine and protopine. These compounds have antimicrobial, anti-inflammatory, immunomodulation, and nutritional effects. The objective of the present study was to evaluate the effects of the supply of a product containing benzophenanthridine and protopine (Sangrovit(r)WS 100...
